Houseboat meal ideas

We are getting ready to spend a few days at lake powell and are in charge of one day of meals (breakfast, lunch, dinner and snacks) I know a few of you were in lake powell this summer and wanted to see if you had some EASY meal ideas. I am thinking of preparing breakfasts casseroles before hand and bbq sandwiches on rolls for lunch and chex mix and rice crispies for snacks for the kids and fruit. I haven't thought of dinner and dessert. any ideas? I am not set on my breakfast or lunch either so any ideas would be great! Thanks....

Michelle! Call my mom, after going to Powell for pretty much every summer as a family, she has got the whole packing-food thing down better than anyone else I've ever met. Give her a call, she's amazing. Hope you guys have fun!

Michelle, a really easy yummy breakfast is Breakfast burritos. I have even made them a head of time and wrapped them in tin foil and either threw them in the oven of on the BBQ. They kinda of please every one and are very easy. Have fun.

Michelle, if you don't do that breakfast burrito, I think I might steal it!:)I was going to do bagels and cream cheese but my day is Saturday, and I was worried the bagels might not be so fresh. When is your day?

Where was that hike you guys did? It looks so awesome! I'd like to try that one. We'll be down in St. George Oct. 16. Paul got tickets to the Tuachan. It would be fun to see you guys.

Sorry to hear that you are sick and hopefully you are on the mend. As for ideas...I always liked doing tin-foil dinners in the oven...easy clean up. Hope all is well. Take care.

MichellE! So fun to find your link on Danielle's blog! Do you remember me from back in the day at good ole AFHS, I think we had seminary together!
